German Breakfast Sandwiches

German-style breakfast sandwiches - no brotchen needed!

I grew up splitting time between Germany and the U.S., so soft-boiled eggs and breakfast sandwiches are part of my morning routine.

These open-faced sandwiches are really easy to make, although expect to have crumbs all over the kitchen.

Here’s what you need:

  • A roll of bread with a hard crust (French baguettes, fresh sourdough loaf, etc.)
  • Butter or butter-replacement
  • Cheese
  • Cold-cut meats (think prosciutto and salami instead of deli sandwich meat)
  • Sliced tomatoes
  • Cream cheese (optional)
  • Capers (optional)

Cut the bread, butter it, layer everything else on, and you’re ready to start the day.

For bonus points, add a soft-boiled egg to the mix, which I only mess up…about half of the time. 🥚
